Fans are used across a wide variety of restaurant equipment to create airflow and dissipate heat. A fan consists of a rotating arrangement of vanes or blades which act upon the air. The rotating assembly of blades and hub is known as an impeller, rotor or runner. Usually, it is contained within some form of housing or case. This may direct the airflow or increase safety by preventing objects from contacting the fan blades.

Geared devices can change the speed, torque and direction of a power source. Gears almost always produce a change in torque, creating a mechanical advantage, through their gear ratio and thus may be considered a simple machine. The teeth on the two meshing gears all have the same shape. Two or more meshing gears, working in a sequence, are called a gear train or a transmission. A gear can mesh with a linear toothed part, called a rack, producing translation instead of rotation.

Electric motors may be classified by considerations such as power source type, internal construction, application and type of motion output. In addition to AC versus DC types, motors may be brushed or brushless, may be of various phase (see single-phase, two-phase or three-phase) and may be either air-cooled or liquid-cooled.
